In a small baking dish (large for 4 servings), combine the pulled chicken (shredded into pieces), corn, tomatoes, cilantro sauce, and cream (shake the packet before opening); season with salt and pepper and stir to combine. Top evenly with the cheddar and Monterey Jack. Cover tightly with foil and bake 15-20 minutes until the cheese is melted and the chicken is heated through. Remove from the oven. Press the tomatoes down with the back of a spoon to burst, then stir everything together.
