When a pinch of cornstarch sizzles immediately, add the coated chicken in an even layer (discard excess). Cook undisturbed 3-4 minutes until lightly browned. Continue stirring occasionally 3-4 minutes until browned and cooked through. USDA minimum: 165°F for chicken.

In a bowl, combine the kale, carrots, white scallion bases, vinegar, and a drizzle of olive oil; season if desired and toss. In a large microwave-safe bowl, whisk together the honey and as much buffalo sauce as you like. Add the butter. Microwave 30 seconds to 1 minute until the butter melts; stir. In a separate bowl, combine the guacamole and ranch dressing.

Toast the baguette halves cut-side down in the same pan over medium-high 1-2 minutes until lightly browned.
