How to make it

Cut the potatoes into 1/4-inch-thick fries and pat dry. Toss on a prepared baking sheet with 1 tablespoon olive oil, 1/4 tsp. salt, and a pinch of pepper; spread into an even layer. Roast at 425°F until lightly browned, 25-28 minutes, tossing halfway through. Continue with the recipe while the fries roast.

Cut the lime into wedges. Pat the steak strips dry. Coarsely chop, then separate the pieces.

Place a large nonstick pan over medium-high heat and add 1 tsp. olive oil. Add the steak strips and sear undisturbed, 1 minute. Add the pesto (use less if you prefer less heat), chicken base, and 1/4 cup water. Stir occasionally until no pink remains and the steak reaches 145°F, 4-6 minutes. Remove from heat. Top with cheese and rest 3 minutes.

Place the buns directly on the oven rack and toast until lightly browned, 1-2 minutes. Remove carefully from the oven.

Spread crema on the bottom bun. Pile on the steak mixture and close with the top bun. Serve with the seasoned fries alongside and drizzle chimichurri over the fries to taste, or serve on the side for dipping. Squeeze lime wedges over everything to taste.
