1 tsp. Blackening Seasoning
How to make it

Cut the potatoes into 1/2-inch-thick fries and pat dry. Toss on a prepared baking sheet with 2 tsp. olive oil and a pinch of pepper; spread into a single layer. Roast at 425°F until lightly browned, 28-30 minutes, tossing once halfway through. Transfer the hot fries to a mixing bowl and toss with the blackening seasoning, minced cilantro (prepared in next step), 1/4 tsp. salt, and a pinch of pepper. Continue with the recipe while the fries roast.

Mince the cilantro, leaves and stems. Form the ground beef into two equally-sized patties, about 5 inches across. Season both sides with 1/4 tsp. salt and a pinch of pepper.

Place a medium nonstick pan over medium-high heat and add 1 tsp. olive oil. Add the buns cut-side down and toast until golden-brown, 2-3 minutes. Transfer to a plate. Keep the pan over medium-high heat — no need to wipe clean.

Add the patties to the hot, dry pan. Cook until browned and the beef reaches a minimum internal temperature of 160°F, 4-6 minutes per side, topping with cheese after flipping. Transfer to a plate, cover with foil, and keep warm. Keep the pan over medium-high heat — no need to wipe clean.

Drain the pineapple slices and add to the hot pan. Cook until lightly caramelized, 1-2 minutes per side. Remove from heat. Top each patty with a pineapple slice. Build the burgers: spread mayonnaise on the bottom bun, then layer with arugula, the patty with pineapple, a drizzle of teriyaki glaze, and the top bun. Serve with the seasoned fries alongside.
