4 fl. oz. Cream Sauce Base
1 Fuji Apple
2 oz. Baby Spinach
1 oz. Roasted Sliced Almonds
1 oz. Grated Parmesan Cheese
½ fl. oz. Seasoned Rice Vinegar
How to make it

Quarter the apple and remove the core; cut into thin slices. Pat the chicken dry and season both sides with 1/4 tsp. salt and a pinch of pepper.

Place a medium nonstick pan over medium-high heat and add 1 tsp. olive oil. Add the chicken and sear until browned, 2-3 minutes per side. Transfer to a prepared baking sheet; wipe the pan clean and reserve. Roast at 400°F until the chicken reaches 165°F, 10-12 minutes. Remove from the oven. Continue with the recipe while the chicken roasts.

Return the reserved pan to medium-high heat. Add the cream base and a pinch of salt; stir and bring to a simmer. Once simmering, remove from heat and stir in the grated cheese until combined. If the sauce is too thick, add water 1 tablespoon at a time.

In a mixing bowl, whisk together the seasoned rice vinegar, 1 tsp. olive oil, and a pinch of salt and pepper. Add the apple slices and spinach; toss until coated.

Place the chicken on plates and spoon the Parmesan cream sauce generously over the top. Arrange the apple-spinach salad alongside and scatter the almonds over the salad.
