3 fl. oz. Buttermilk Ranch Dressing

2 oz. Shredded Cheddar Cheese
4 Green Onions
1 oz. Tortilla Strips
How to make it

Trim and thinly slice the green onions, keeping whites and greens separate. In a mixing bowl, combine the cabbage, scallion whites, dressing, 1/4 tsp. salt, and a pinch of pepper; set aside. Pat the sliced pork dry; coarsely chop and separate the pieces. Season all over with 1/4 tsp. salt and a pinch of pepper.

Place a large nonstick pan over medium heat and add 1 tsp. olive oil. Add the corn and stir occasionally until heated through, 1-2 minutes. Transfer to the bowl with the slaw and stir to combine. Wipe the pan clean and keep over medium heat.

Add 2 tsp. olive oil and the sliced pork to the hot pan. Stir occasionally until browned and reaching 145°F, 5-7 minutes. Stir in the BBQ sauce, pesto (to taste), and 2 tablespoons water; cook until the pork is coated, 1-2 minutes. Remove from heat. Rest 3 minutes. Continue with the recipe while the pork cooks.

Wrap the tortillas in a damp paper towel and microwave until warm, 30-60 seconds. Fill with the chipotle BBQ pork, cheese, and corn slaw. Top with the scallion greens and tortilla strips.
