1 oz. Apricot Preserves
2 tsp. Minced Garlic and Parsley
¼ oz. Fresh Basil
1 tsp. Grained Dijon Mustard
0.14 oz. Lemon Juice
½ tsp. Lemon N Herb Seasoning
½ tsp. Poultry Seasoning
How to make it

Pat the pork chops dry and season both sides with poultry seasoning and 1/4 tsp. salt. Place a medium nonstick pan over medium heat and add 1 tsp. olive oil. Add the pork and cook until golden-brown and reaching 145°F, 3-5 minutes per side (check thinner chops sooner). Remove from heat and rest 3 minutes. Continue with the recipe while the pork cooks.

Trim the zucchini ends, halve lengthwise, and cut into 1/4-inch half-moons. Place a large nonstick pan over medium-high heat and add 2 tsp. olive oil. Add the zucchini and stir occasionally until slightly browned and tender, 6-8 minutes. While the zucchini cooks, stem and coarsely chop the basil.

Add the minced garlic and parsley, lemon herb seasoning, and a pinch of salt and pepper to the pan. Stir often until combined and the garlic is fragrant, 1-2 minutes. Remove from heat and stir in the fresh basil until combined.

In a microwave-safe bowl, combine the apricot preserves, mustard (to taste), lemon juice, and 1 tablespoon butter. Microwave uncovered until heated through, 15-20 seconds; stir to combine. Divide the pork chops and zucchini between plates. Slice the pork chop if desired and spoon the apricot-mustard sauce generously over the top.
