Make the spice blend and broil the shiitake protein: Move oven rack to middle position and set oven to broil on high. Whisk together just 1 tsp paprika, just 1 tsp chili powder, just 2 tsp sugar, and a pinch of salt and pepper in small bowl. On baking sheet, combine shiitake protein, just half the spice blend, just 2 tsp liquid smo

Make the slaw: Whisk sour cream, just 2 tsp sugar, just 1 tbsp vinegar, and a pinch of salt and pepper in medium bowl. Add cabbage and toss to combine.

Make the mustard BBQ sauce: Whisk together remaining spice blend, remaining vinegar, mustard, just 1 tsp tomato powder, remaining sugar, and 1 tbsp water in small bowl.
