Ingredients
10 oz Shrimp (peeled & deveined)
8 oz Fettuccine Pasta
4 oz Grape Tomatoes
3 oz Baby Spinach
2 clove Garlic
6 tbsp Roasted Bell Pepper Pesto
2 tbsp Mascarpone Cheese
3 tbsp Romesco Sauce (contains almonds)
ΒΌ cup Grated Romano Cheese
How to make it
1
Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Peel and roughly chop 2 garlic cloves (4 cloves for 4 servings). Halve the tomatoes, season with salt and pepper, and set in a bowl.
2
Add the pasta to the boiling water. Cook stirring occasionally 8-10 minutes until al dente. Drain, reserving 1/4 cup pasta water (1/2 cup for 4 servings), and return to the pot.
3
Pat the shrimp dry and season with salt and pepper. Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the shrimp, garlic, and seasoned tomatoes; season again. Cook stirring occasionally 3-5 minutes until the tomatoes soften and the shrimp are pink and cooked through. Add the spinach and stir 30 seconds to 1 minute until just wilted. Remove from heat.
4
Add the shrimp and vegetable mixture, mascarpone, romesco sauce, red pepper pesto, and half the reserved pasta water to the pot. Cook over medium-high, stirring constantly, 1-2 minutes until the pasta is coated and the sauce comes together, adding more pasta water gradually if needed. Taste and season. Serve topped with romano.
