Ingredients
5 oz white rice
1 romaine heart
10 oz pkg ground chicken
¼ oz taco seasoning
¾ oz cheddar Milk
4 oz salsa
How to make it

Cook rice. In a small saucepan, combine rice, 1¼ cups water, and ½ teaspoon salt; bring to a boil over high heat. Cover and cook over low heat until rice is tender and water is absorbed, 17–20 minutes. Keep covered off heat until ready to serve.

Prep lettuce. Thinly slice desired amount of lettuce for garnish.

Cook chicken. In a medium skillet, heat 1 tablespoon oil over high until lightly smoking. Add chicken and cook, breaking up meat into small pieces, until liquid has cooked off and chicken is no longer pink and just cooked through, 3–4 minutes.

Season chicken. Stir taco seasoning into chicken and continue cooking until a layer of browned bits have formed at the bottom of skillet, another 1–2 minutes. Stir in ¼ cup water; scrape bottom of skillet to dissolve browned bits. Continue cooking until liquid has evaporated and meat is dry, about 1 minute. Remove from heat; season to taste with salt and pepper.

Serve. Grate cheese on the large holes of a box grater. Divide rice and chicken between bowls. Top with lettuce, cheese, and salsa. Enjoy!
