Rinse and dry all produce. Drain and rinse the beans. Quarter the lime. Roughly chop the cilantro. Transfer the beans to a medium microwave-safe bowl. Stir in half the chili powder, 1 tablespoon water (2 tablespoons for 4 servings), a drizzle of oil, a pinch of salt, and pepper. Cover with plastic wrap and microwave until warmed through, 1-2 minutes. Add a squeeze of lime juice and stir to combine.

Drain the corn and pat dry with paper towels. Heat a drizzle of oil in a large pan over high. Add the corn and cook stirring occasionally until golden brown and lightly charred, 4-6 minutes (cover if the corn starts popping). Meanwhile, in a large bowl, combine the mayonnaise, half the cotija, remaining chili powder, juice from two lime wedges (four wedges for 4 servings), a big pinch of salt, and pepper. Add the charred corn to the bowl and stir to combine. Taste and season. Set aside. Wipe out the pan.

Arrange the tortillas on a clean work surface. Evenly divide the seasoned beans, Mexican cheese blend, and remaining cotija between the bottom halves. Fold each in half to form quesadillas. Heat a drizzle of oil in the pan over medium. Add the quesadillas and cook until the tortillas are golden and the cheese melts, 2-4 minutes per side (work in batches if needed). Lower heat if browning too quickly.

Cut the quesadillas into wedges; divide between plates and dollop with sour cream. Serve the corn esquites on the side and squeeze the remaining lime over everything. Scatter with cilantro and serve.
