Ingredients
9 oz. Par-Cooked 5-Cheese Tortellini
4 fl. oz. Cream Sauce Base
6 oz. Artichoke Hearts
2 oz. Baby Spinach
1 oz. Shredded Italian Cheese Blend
2 tsp. Mirepoix Broth Concentrate
2 tsp. Minced Garlic and Lemon Basil
⅓noz.nPanko Breadcrumbs
¼ tsp. Red Pepper Flakes
How to make it
1
Bring a large pot of salted water to a boil. Add the tortellini and cook until al dente, 3-4 minutes. Reserve 1/2 cup cooking water before draining. Set aside. Continue with the recipe while the tortellini cooks.
2
Coarsely chop the spinach. Drain the artichokes in a colander, rinse, pat dry, and coarsely chop. Place a large nonstick pan over medium heat and add 1 tsp. olive oil. Toast the panko, stirring often, until golden-brown, 1-2 minutes. Transfer to a plate. Keep the pan over medium heat.
3
Add 2 tsp. olive oil, the minced garlic, and lemon basil to the hot pan; stir until fragrant, 30-60 seconds. Add the cream base, cheese, mirepoix base, spinach, artichokes, 1/4 tsp. salt, and 1/4 tsp. pepper. Stir to combine and bring to a simmer.
4
Once simmering, add the tortellini and 2 tablespoons reserved cooking water. Stir occasionally until slightly thickened, 1-2 minutes. Add more cooking water 1 tablespoon at a time if too thick. Remove from heat. Divide between plates and scatter the toasted panko and red pepper flakes (to taste) on top.
