1 each Yellow Onion
2 clove Garlic
1 bunch Rosemary
ΒΌ cup Grated Parmesan Cheese
1 Β½ tbsp Mushroom Duxelles
1 tbsp Soy Sauce
How to make it

Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Halve, peel, and medium dice the onion(s). Cut the mushrooms into bite-sized pieces. Pick the rosemary leaves. Peel and roughly chop 2 garlic cloves (4 for 4 servings).

Add the farro to the boiling water. Cook uncovered 18-20 minutes until tender. Drain thoroughly.

Heat a drizzle of olive oil in a separate medium pot over medium-high. When a rosemary leaf sizzles immediately on contact, add all the rosemary leaves. Cook stirring constantly 1-2 minutes until lightly browned and crispy. Transfer to a paper towel-lined plate and season immediately. Wipe out the pot.

Heat a drizzle of olive oil in the same pot over medium-high. Add the onion and cook stirring occasionally 3-4 minutes until softened. Add the garlic and mushrooms; season with salt and pepper. Cook stirring occasionally 3-4 minutes until the mushrooms are lightly browned. Add the broth and bring to a boil. Reduce to low and simmer 5-6 minutes. Add the cooked farro. Stir to combine. Taste and season. Ladle into bowls and top with the crispy rosemary and parmesan.
