½ lb Udon Noodles
6 oz Carrots
1 each Lime
1 tbsp Sesame Oil
2 each Scallions
3 tbsp Soy Glaze
3 tbsp Savory Black Bean-Chile Sauce
1 tsp Black & White Sesame Seeds
1 each Bell Pepper
How to make it

Take the noodles out of the refrigerator. Rinse and dry all produce. Stem the peppers, halve lengthwise, seed, and thinly slice crosswise. Peel the carrots and thinly slice on an angle. Slice the scallions, keeping the white bases and green tops separate. Finely grate the lime zest to get 1 teaspoon (2 tsp for 4 servings). Halve the limes and squeeze the juice into a bowl. In a separate bowl, whisk together the soy glaze, sesame oil, black bean-chile sauce, and 1/4 cup warm water (1/2 cup for 4 servings).

Heat a drizzle of olive oil in a medium pot over medium-high. Add the pepper strips and sliced carrots in an even layer. Cook undisturbed 2-3 minutes until lightly browned. Add the white scallion bases. Cook stirring occasionally 2-3 minutes until softened.

Pat the shrimp dry; season with salt and pepper if desired. Add to the pot. Cook stirring occasionally 1-2 minutes until slightly opaque.

Separate the noodles by hand. Add the noodles and sauce to the pot. Cook stirring occasionally 2-3 minutes until the noodles are heated through and the shrimp are opaque and cooked through. Remove from heat. Stir in the lime zest and as much lime juice as you like. Taste and season. Serve topped with the green scallion tops and sesame seeds.
