Ingredients
10 oz Ground Pork
6 oz Orecchiette Pasta
1 each Zucchini
1 tbsp Capers
2 tbsp Dried Currants
2 tbsp Tomato Paste
2 clove Garlic
¼ cup Grated Parmesan Cheese
2 tbsp Mascarpone Cheese
1 tsp Quatre Épices (White Pepper, Nutmeg, Ginger & Cloves)
¼ tsp Crushed Red Pepper Flakes
How to make it
1
Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry the zucchini; halve lengthwise and thinly slice crosswise. Peel and roughly chop 2 garlic cloves. Place the currants in a bowl, cover with 1/4 cup hot water, and soak at least 10 minutes.
2
Add the pasta to the boiling water. Cook stirring occasionally 9-11 minutes until al dente. Drain, reserving 1/2 cup pasta water, and return to the pot.
3
Heat a drizzle of olive oil in a nonstick pan over medium-high. Spread the zucchini in an even layer and cook undisturbed 3-4 minutes until lightly browned. Season with salt and pepper. Continue stirring occasionally 2-3 minutes until softened. Transfer to a plate.
4
Heat a drizzle of olive oil in the same pan over medium-high. Add the pork, garlic, capers, and quatre epices; season with salt and pepper. Cook stirring frequently, breaking the meat apart, 4-5 minutes until lightly browned. Stir in the tomato paste and as much red pepper flake as you like; season. Cook stirring constantly 1-2 minutes. Add 1/4 cup water (it may spatter) and the rehydrated currants with their liquid; season. Cook stirring occasionally 2-3 minutes until the sauce thickens and the pork is cooked through. Remove from heat.
5
Add the pork and sauce, cooked zucchini, and half the reserved pasta water to the pot. Cook over medium-high, stirring constantly, 1-2 minutes until the pasta is coated, adding more water gradually if needed. Remove from heat and stir in the mascarpone. Taste and season. Serve topped with parmesan.
