1 Persian cucumber, peeled and cut into 1/2-inch pieces
1 shallot, peeled and sliced (divided)
1 garlic clove, peeled and minced
2 tbsp sherry vinegar
13.4 oz cannellini beans
2 oz sun-dried tomatoes, diced

1 tsp crushed Aleppo pepper
1/2 oz parsley, chopped
1 lemon, half juiced and half cut into wedges
3 tbsp olive oil (from your kitchen)

How to make it
1
Marinate the vegetables: Combine breadcrumbs, tomatoes, cucumber, just half the shallot, garlic, 2 tbsp olive oil, sherry vinegar, a pinch of salt and pepper in medium sized bowl. Set aside and marinade for about 20 minutes.
