How to make it

Marinate the vegetables: Combine breadcrumbs, tomatoes, cucumber, just half the shallot, garlic, 2 tbsp olive oil, sherry vinegar, a pinch of salt and pepper in medium sized bowl. Set aside and marinade for about 20 minutes.

Blend the soup: Carefully transfer marinated veggies to blender. Add 1/2 cup water and blend until smooth, about 2 minute. Season to taste with salt and pepper. Refrigerate gazpacho until chilled, for about 2 hours. (TIP: For a smoother texture, pass soup through a fine mesh strainer.)

Make the cannellini salad: Meanwhile, combine beans, sun-dried tomatoes, olive tapenade, remaining shallot, parsley, just 1 tsp Aleppo pepper, lemon juice, 1 tbsp olive oil, in medium sized bowl. Season to taste with salt and pepper. Refrigerate until ready to eat.
