8 oz. Grape Tomatoes
1 Zucchini
5 oz. Frozen Corn
2 oz. Grated Parmesan Cheese
2 oz. Sun Dried Tomato Pesto
¾ oz. Roasted Garlic & Herb Butter
¼ cup Panko Breadcrumbs
0.28 oz. Lemon Juice
6 Chive Sprigs
1 tsp. Garlic Salt
How to make it

Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, 8-10 minutes. Reserve 1/2 cup pasta cooking water before draining. Set the drained pasta aside. Wipe the pot clean and reserve. Continue with the recipe while the pasta cooks.

Trim the zucchini ends, halve lengthwise, and slice thinly into half-moons. Halve the tomatoes. Mince the chives.

Return the reserved pot to medium heat. Add half the butter and a pinch of salt; stir until melted, 30-60 seconds. Add the panko and stir often until golden-brown, 2-3 minutes. Transfer to a plate. Wipe the pot clean and keep over medium heat.

Add 2 tsp. olive oil, the zucchini, tomatoes, garlic salt, and a pinch of pepper to the hot pot. Stir occasionally until the zucchini is slightly browned and the tomatoes are tender, 5-7 minutes. Add the corn, remaining butter, and a pinch of salt; stir often until heated through, 2-3 minutes.

Add the cream base, 2 tablespoons reserved pasta cooking water, pesto, 3/4 of the cheese (reserve the rest for garnish), 1/4 tsp. salt, and lemon juice. Stir and bring to a simmer. Once simmering, add the pasta; stir often until the sauce thickens slightly and the pasta is heated through, 3-4 minutes. Add more pasta water 1 tablespoon at a time if too thick. Remove from heat. Divide between plates and top with the remaining cheese, toasted panko, and chives.
