Ingredients
12 oz. Boneless Skinless Chicken Breasts
12 oz. Broccoli Florets
1 Lemon
2 oz. Cream Cheese
¼ cup Panko Breadcrumbs
½ oz. Grated Parmesan Cheese
2 Green Onions
0.44 oz. Mayonnaise
2 tsp. Everything Bagel Blend
How to make it
1
Zest and halve the lemon; cut one half into wedges and juice the other. Break the broccoli into bite-sized florets. Trim and thinly slice the green onions. Place a medium nonstick pan over medium-high heat and add 1 tsp. olive oil. Toast 1 tablespoon panko (reserve the rest for the chicken crust) until lightly browned, 1-2 minutes. Transfer to a mixing bowl to cool. Wipe the pan clean and reserve. Stir the Parmesan and 1/2 tsp. lemon zest into the toasted panko; set aside.
2
Pat the chicken dry and season both sides with salt and pepper. Spread mayonnaise evenly on one side. Combine the remaining panko, 1/4 tsp. salt, and poppy seed sesame blend on a plate; press the chicken mayo-side down firmly into the panko mixture to adhere. Place another medium nonstick pan over medium heat and add 1 tablespoon olive oil. Add the chicken panko-side down and cook until browned and reaching 165°F, 5-7 minutes per side. Remove from heat. Continue with the recipe while the chicken cooks.
3
Return the reserved pan to medium heat and add 2 tsp. olive oil. Add the broccoli and 1/4 cup water. Cover and cook until the water is almost completely evaporated, 4-6 minutes. Uncover and stir occasionally until tender, 2-3 minutes. Season with 1/4 tsp. salt and a pinch of pepper.
4
In a microwave-safe bowl, combine the softened cream cheese, 1 tablespoon flour, green onions, a pinch of pepper, 2 tablespoons water, and 1 tsp. lemon juice. Microwave uncovered until smooth and heated through, 45-60 seconds, stirring every 15 seconds. Add water 1 tsp. at a time if too thick. Divide the chicken and broccoli between plates. Spoon the cream sauce over the chicken and scatter the lemon-Parmesan panko over the broccoli. Squeeze lemon wedges over everything to taste.
