½ lb Ramen Noodles
4 oz Mushrooms
2 each Scallions
3 tbsp East Asian-Style Sautéed Aromatics
3 tbsp Soy Glaze
1 tbsp Rice Vinegar
1 tbsp Soy Sauce
⅓ cup Kimchi
2 clove Garlic
1 each Jalapeño Pepper
1 cup Chicken Stock
1 tbsp Sesame Oil
2 tsp Honey
⅓ cup Crispy Onions
½ tbsp Togarashi Seasoning (Sweet Paprika, Hot Paprika, Dried Orange Peel, Poppy Seeds, White Sesame Seeds & Black Sesame Seeds)
How to make it

Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Peel and roughly chop 2 garlic cloves (4 for 4 servings). Slice the scallions, keeping the white bases and green tops separate. Thinly slice the mushrooms. Roughly chop the kimchi. Stem the peppers, halve lengthwise, seed, and thinly slice crosswise. Wash hands immediately after. In a bowl, combine the sliced peppers, vinegar, and togarashi; season with salt and pepper and set aside to marinate. In a large bowl, whisk together the sesame oil and honey.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the garlic and white scallion bases; season. Cook stirring constantly 1-2 minutes until slightly softened. Add the pulled chicken (shredded) and soy sauce (it may spatter); season. Cook stirring frequently 2-3 minutes until heated through. Transfer to the bowl of glaze and stir to coat. Taste and season. Cover with foil.

Add the noodles to the boiling water, stirring gently to separate. Cook stirring occasionally 3-5 minutes until tender. Drain and rinse under warm water 30-60 seconds. Divide among serving bowls. Wipe out the pot.

In the same pot, combine the broth base, sliced mushrooms, and enough water per the package directions. Bring to a boil over high, then reduce to low and simmer 3-4 minutes until the mushrooms are tender. Taste and season. Ladle the broth over the noodles in each bowl. Top with the glazed chicken, chopped kimchi, marinated peppers, green scallion tops, and any remaining garnishes.
