1 tbsp Sambal Oelek
3 tbsp Roasted Peanuts
How to make it

Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Stem the peppers, halve lengthwise, seed, and thinly slice crosswise. Peel and roughly chop 2 garlic cloves (4 for 4 servings). Slice the scallions, keeping the white bases and green tops separate. In a bowl, combine the soy glaze, sesame oil, sweet chili sauce, 2 tablespoons water (4 tbsp for 4 servings), vinegar, and as much sambal oelek as you like.

Add the noodles to the boiling water, stirring to separate. Cook stirring occasionally 2-4 minutes until tender. Drain and rinse under warm water 30-60 seconds. Return to the pot.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the pork; season. Cook stirring frequently, breaking the meat apart, 5-6 minutes until lightly browned. Add the sliced peppers, garlic, and white scallion bases; season. Cook stirring occasionally 2-3 minutes until slightly softened and the pork is cooked through. Remove from heat.

Add the cooked pork and peppers and sauce to the pot of noodles. Cook over medium-high, stirring frequently, 1-2 minutes until thoroughly coated. Taste and season. Serve topped with peanuts and the green scallion tops.
