Rinse and dry all produce. Trim and discard the root end from the lettuce; separate the leaves. Thinly slice 1-2 small center leaves until you have 1/3 cup shredded lettuce (2/3 cup for 4 servings). Drain the pickle; roughly chop.

In a small bowl, combine the mayonnaise, ketchup, half the mustard, and 1/2 teaspoon Fry Seasoning (for 4 servings, use all the mustard and 1 teaspoon Fry Seasoning). Stir in water 1 teaspoon at a time until the sauce reaches a drizzling consistency. Set aside.

Crumble the tofu into small bite-sized pieces. Heat a drizzle of oil in a large pan over medium-high. Add the crumbled tofu, remaining Fry Seasoning, salt, and pepper. Cook stirring occasionally until golden and heated through, 4-5 minutes. Stir in the stock concentrate and 1/4 cup water (1/3 cup for 4 servings). Cook stirring until the liquid absorbs, 2-3 minutes. Add half the cheese and stir until melted, about 1 minute (save the rest for serving).

Divide the lettuce leaves between plates. Fill with the tofu mixture, chopped pickle, shredded lettuce, crispy fried onions, remaining cheese, and special sauce. Serve.
