How to make it

Prep ingredients. Finely chop onion.

Cook onions. In a large pot, heat 2 tablespoons oil over medium. Add onions and a pinch of salt. Cook, stirring occasionally, until softened and translucent, 4–5 minutes.

Cook broth & pasta. Add 4 cups water, broth concentrate, and tamari to pot; bring to a boil over high heat. Add tortelloni and cook, stirring occasionally, until al dente, about 3 minutes.

Finish & serve. Off heat, stir spinach and Parmesan into broth until spinach is wilted. Season to taste with salt and pepper. Serve tortelloni in broth with a drizzle of oil, if desired. Enjoy!
