Position a rack at the top of the oven and preheat to 450°F. Rinse and dry all produce. Cut the potatoes into 1/2-inch pieces. Trim and quarter the mushrooms. Trim and discard the woody ends from the asparagus. In a medium bowl, whisk together the cream sauce base, stock concentrate, garlic powder, and 3 tablespoons water (6 for 8 servings).

Place the potatoes in a medium pot with salted water to cover by 2 inches. Bring to a boil and cook until tender, 15-20 minutes. Drain and mash with the creme fraiche until smooth. Taste and season with salt and pepper. Keep covered off heat.

While the potatoes cook, pat the chicken dry and season all over with salt and pepper. Heat a large drizzle of oil in a large pan over medium-high. Cook the chicken until browned and cooked through, 5-7 minutes per side. Transfer to a plate. Wipe out the pan. USDA minimum: 165°F for chicken.

Melt 2 tablespoons butter in the same pan over medium-high. Add the mushrooms and season with salt and pepper. Cook stirring occasionally until browned and tender, 3-4 minutes. Add the vinegar and 1 teaspoon sugar; stir until the vinegar is mostly reduced, 30-60 seconds.

Transfer the mushrooms to an 8x8-inch baking dish. Top with the chicken and pour the cream sauce over everything to coat. Arrange the asparagus around the chicken and scatter with mozzarella; season with salt and pepper. Bake on the top rack until the asparagus is tender and the cheese is melted and lightly browned, 10-12 minutes.

Serve the mashed potatoes and the chicken and mushroom bake family style, or divide between plates. Spoon any remaining sauce from the baking dish over the chicken. Serve the asparagus on the side.
