5 oz. Penne Pasta
1 Onion
2 oz. Shredded Mozzarella
4 tsp. Vegetable Base
½ oz. Seasoned Croutons
2 Garlic Cloves
3 Thyme Sprigs
How to make it

Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, 10-12 minutes. Drain in a colander, shaking off excess water. Set aside. Reserve the pot — no need to wipe clean. Continue with the recipe while the pasta cooks.

Cut the mushrooms into 1/4-inch slices. Coarsely crush the croutons. Strip the thyme leaves from the stems. Halve and peel the onion; slice the halves into thin strips. Mince the garlic.

Place a large nonstick pan over medium-high heat and add 2 tsp. olive oil. Add the mushrooms, onions, garlic, 1/2 tsp. salt, and 1/4 tsp. pepper. Stir occasionally until the onions and mushrooms are deeply browned, 10-12 minutes. Remove from heat.

Return the reserved pot to medium-high heat. Add the cream base, vegetable base, half the thyme (reserve the rest for garnish), half the cheese (reserve the rest for topping), the drained pasta, and the mushroom-onion mixture. Stir to combine and bring to a simmer. Once simmering, stir occasionally until slightly thickened, 2-4 minutes. Remove from heat.

Transfer the pasta to a prepared casserole dish. Top with the crushed croutons and remaining cheese. Bake at 400°F until the cheese is golden-brown, 6-8 minutes. Remove from the oven. Divide between plates and garnish with the remaining thyme.
