1 Shallot
1 oz. Creme Fraiche

1 tsp. Black Garlic Seasoning
1 tsp. Garlic Pepper
½ tsp. Potato Spice Seasoning
How to make it

Cut the potatoes into 1-inch pieces. Toss on a prepared baking sheet with 2 tsp. olive oil and a pinch of salt and pepper; spread into a single layer. Roast at 425°F for 15 minutes. Continue with the recipe while the potatoes roast.

Peel and halve the shallot; slice the halves into thin strips. Pat the trout dry and season the flesh side with 3/4 of the black garlic seasoning (reserve the rest for the sauce) and 1/4 tsp. salt.

After 15 minutes, remove the baking sheet from the oven. Stir the diced peppers, shallots, potato spice seasoning, garlic pepper, and a pinch of salt into the potatoes; push everything to one side. Place the trout on the empty side. Roast until the vegetables are tender and the trout reaches 145°F, 7-10 minutes. Continue with the recipe while they finish roasting.

In a microwave-safe bowl, combine the butter and crème fraîche. Microwave uncovered until melted, 15-20 seconds; stir in the remaining black garlic seasoning, a pinch of pepper, and 1 tsp. water. Add more water 1 tsp. at a time if too thick. Divide the trout and vegetables between plates and spoon the truffle cream over the fish to taste.
