6 Small Flour Tortillas
1 Roma Tomato
3 oz. Diced Poblano
3 oz. Shredded Red Cabbage
1 Lime
2 oz. Shredded Cheddar Cheese
1 fl. oz. Garlic Aioli
¼ oz. Cilantro
2 tsp. Taco Seasoning
How to make it

Core the tomato and cut into 1/4-inch dice. Halve the lime; cut one half into wedges and juice the other. Stem the cilantro and tear the leaves. In a mixing bowl, combine the tomatoes, cabbage, cilantro, 1 tablespoon lime juice, and a pinch of salt and pepper. Set aside.

Pat the shrimp dry and season all over with taco seasoning. Place a large nonstick pan over medium-high heat and add 2 tsp. olive oil. Add the poblanos (to taste) and stir occasionally until slightly softened, 3-5 minutes. Add the shrimp and cook until pink and reaching 145°F, 2-3 minutes per side. Remove from heat.

Arrange the tortillas on a prepared baking sheet (some overlap is fine). Poke each tortilla all over with a fork, then top evenly with cheese. Broil until the cheese is melted and starting to brown, 1-2 minutes. Watch carefully — tortillas can burn quickly under the broiler. Remove from the oven.

Fill the cheesy tortillas with the shrimp and poblano mixture. Top with the tomato-cabbage slaw and a drizzle of aioli. Squeeze lime wedges over everything to taste.
