4 oz. Grape Tomatoes
2 oz. Spring Mix
1½ oz. Greek Feta Dressing
1 oz. Sun Dried Tomato Pesto
1 oz. Creme Fraiche
¾ oz. Roasted Garlic & Herb Butter
½ tsp. Garlic and Parsley Seasoning
½ tsp. Garlic Salt
How to make it

Cut the potatoes into 1/2-inch pieces. Halve the tomatoes (or core and dice if you received a whole one). Pat the chicken dry and season both sides with garlic and parsley seasoning, salt, and pepper.

Place the potatoes on one side of a prepared baking sheet; toss with 1 tsp. olive oil, garlic salt, and a pinch of pepper, then spread into an even layer. Place the chicken on the empty side and drizzle with 1 tsp. olive oil. Roast at 400°F until the potatoes are tender and the chicken reaches 165°F, 15-20 minutes. Remove from the oven. Stir half the softened butter into the potatoes (reserve the rest for the sauce).

In a microwave-safe bowl, combine the remaining softened butter, crème fraîche, pesto, and 2 tsp. water. Microwave uncovered until heated through, 45-60 seconds; stir to combine. Add water 1 tablespoon at a time if too thick.

Toss the spring mix and tomatoes with the dressing in a mixing bowl. Divide between plates along with the chicken and potatoes. Spoon the sun-dried tomato pesto sauce over the chicken.
