Ingredients
10 oz. Ground Pork
4 Mini Naan Flatbreads
4 oz. Marinara Sauce
3 oz. Frozen Corn
1 Lime
2 oz. Light Sour Cream
1 oz. Shredded Mozzarella
½ oz. Crispy Jalapenos
2 Tbsp. Taco Seasoning
2 Garlic Cloves
How to make it
1
Halve the lime; cut one half into wedges and juice the other. Mince the garlic.
2
Place a large nonstick pan over medium-high heat and add 2 tsp. olive oil. Add the ground pork; stir often, breaking up the meat, until slightly browned, 3-4 minutes. Add half the taco seasoning, the corn, and garlic; stir occasionally until the pork reaches 160°F, 2-3 minutes. Stir in half the marinara until combined, 1-2 minutes. Remove from heat. Continue with the recipe while the pork cooks.
3
In a mixing bowl, combine the sour cream, 2 tsp. lime juice, and a pinch of salt and pepper. Set the lime crema aside.
4
Place the flatbreads on a prepared baking sheet and broil until the edges start to brown, 2-3 minutes. Watch carefully, they can burn quickly. Remove from the oven. Top evenly with the lime crema, pork mixture, cheese, and crispy jalapeños (to taste). Squeeze lime wedges over everything to taste.
