Pat the chicken dry and season both sides with 1/4 tsp. salt and a pinch of pepper. Heat 2 tsp. olive oil in a large nonstick pan over medium. Cook the chicken until it reaches 165°F, 5-7 minutes per side. Set aside to rest 5 minutes before slicing. (For grilling, heat to medium, spray the grates with cooking spray, and follow the same timing.)
