Position a rack at the top and preheat the oven to 425°F. Rinse and dry all produce. Trim, peel, and cut the carrots on a diagonal into 1/2-inch-thick pieces. Cut the potatoes into 1/2-inch-thick wedges. Toss the carrots on one side of a large baking sheet with a drizzle of oil, salt, and pepper. Toss the potatoes on the empty side the same way. Roast on the top rack until browned and tender, 20-25 minutes.

While the vegetables roast, cut the broccoli into bite-sized pieces if needed. Halve, core, and thinly slice the apple. Halve the baguette lengthwise, then cut crosswise into 1-inch pieces. Place the broccoli in a large microwave-safe bowl, cover tightly with plastic wrap, and poke a few holes. Microwave until tender, 1-2 minutes, tossing halfway through. Carefully uncover and season with salt and pepper.

Pat the steak dry and season generously with salt and pepper. Heat a drizzle of oil in a large pan over high heat until nearly smoking. Sear the steak 3-4 minutes per side for medium-rare, or to your desired doneness. USDA minimum: 145°F for beef. Transfer to a cutting board and rest at least 5 minutes before slicing against the grain.

Meanwhile, heat the cream sauce base, cheese roux concentrate, and 2 tablespoons water (4 tablespoons for 4 servings) in a small pot over medium-high until steaming, 1-2 minutes. Reduce heat to medium. Add the cheddar and mozzarella one small handful at a time, alternating and whisking constantly between additions, until fully melted and smooth.

Arrange the steak slices, potatoes, carrots, broccoli, apple slices, and baguette pieces on a large board or platter. Serve family style with the warm fondue alongside for dipping.
