1 oz. Shredded Swiss Cheese
½ oz. Grated Parmesan Cheese
2 tsp. Chicken Broth Concentrate
6 Chive Sprigs
3 Thyme Sprigs
½ tsp. Rotisserie Chicken Seasoning
How to make it

Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, 10-12 minutes. Reserve 1 cup pasta cooking water before draining. Set the drained pasta aside. Continue with the recipe while the pasta cooks.

Stem and mince the thyme. Mince the chives. Halve and peel the onion; slice the halves into thin strips. Pat the chicken dry and season both sides with rotisserie chicken seasoning, salt, and pepper.

Place a medium nonstick pan over medium heat and add 2 tsp. olive oil. Add the chicken and cook until browned and reaching 165°F, 5-7 minutes per side. Transfer to a plate and tent with foil. Wipe the pan clean and keep over medium heat.

Add 2 tsp. olive oil, the onions, and a pinch of salt to the hot pan. Stir occasionally until deep golden-brown, 10-12 minutes, adding oil if needed. Add 1 tsp. thyme (to taste) and stir constantly until fragrant, 30-60 seconds.

Add the cream base, 1/4 cup reserved pasta cooking water, chicken base, shredded cheese, a pinch of pepper, and half the grated cheese (reserve the rest for garnish). Stir and bring to a simmer. Once simmering, add the pasta and stir often until heated through and the sauce thickens slightly, 2-3 minutes. Add more pasta water 1 tsp. at a time if too thick. Remove from heat. Divide between plates, top with the chicken (sliced if desired), and garnish with chives and remaining grated cheese.
