Add the rice, 1 1/4 cups water (2 1/4 cups for 4), and a big pinch of salt and pepper. Bring to a boil, cover, and reduce to a low simmer. Cook until the rice is tender, 15-18 minutes. Keep covered off heat until ready.

While the rice cooks, bring 2 tablespoons butter (4 tablespoons for 4 servings) to room temperature. Rinse and dry all produce. Quarter the lemon. Trim and thinly slice the scallions, keeping whites and greens separate. Dice the tomato.

In a small bowl, combine the sour cream, mayonnaise, garlic powder, and a squeeze of lemon juice. Stir in water 1 teaspoon at a time until the sauce reaches a drizzleable consistency. Season with salt and pepper.

Reduce heat to medium-low and simmer until slightly thickened, 1-2 minutes.

Fluff the rice with a fork; stir in the almonds and half the scallion greens. Season with salt and pepper. Toast the pitas, spread with the softened butter, and cut each into four wedges.

Divide the rice between bowls. Top with the turkey and tomato in separate sections; season the tomato with a pinch of salt. Drizzle the turkey with hot sauce to taste and finish each bowl with the white sauce. Scatter with the remaining scallion greens. Serve with pita wedges and lemon wedges on the side.
