Vita Coco Eau de coco is not raw coconut water straight from the nut. It is reconstituted from coconut water concentrate with a little coconut milk and a gellan gum stabilizer added, which puts it in the ultra processed bucket (NOVA group 4). An 8 fl oz glass gives you about 52 calories, 6 grams of naturally occurring sugar, and a genuinely useful 464mg of potassium, which is the real reason people reach for it after a workout. As a low calorie swap for juice or a sugary sports drink it holds up, but if you pictured pure single ingredient coconut water, read the label first.
