¼ tsp. Red Pepper Flakes
How to make it

Peel the apple, quarter, remove the core, and cut into 1/4-inch dice. Place a large nonstick pan over medium-high heat and add 1 tsp. olive oil. Add the apples and bacon; stir occasionally until the bacon is crisp and the apples start to brown, 2-3 minutes. Transfer to a plate. Reserve the pan — no need to wipe clean. Continue with the recipe while the mixture cooks.

Pat the pork dry and season both sides with 1/4 tsp. salt and 1/4 tsp. pepper. (If you received a whole tenderloin, slice crosswise into 3/4-inch-thick medallions.) Place a medium nonstick pan over medium heat and add 1 tsp. olive oil. Add the pork and cook until reaching 145°F, 3-5 minutes per side — check thinner medallions sooner. Transfer to a plate and rest 3 minutes. Reserve the pan.

Return the large pan used for the bacon to medium-high heat; add 2 tsp. olive oil. Add the Brussels sprouts and stir occasionally until tender and browned, 8-10 minutes. Remove from heat. Stir in the bacon-apple mixture, 1 tablespoon softened butter, and ranch seasoning until melted and combined.

Return the medium pan used for the pork to low heat. Add the maple syrup, mustard, red pepper flakes (to taste), and crème fraîche; stir constantly until combined and heated through, 1-2 minutes. Remove from heat. Divide the pork and Brussels sprouts hash between plates; spoon the maple-mustard sauce over the pork.
