Position a rack at the top and preheat the oven to 425°F. Rinse and dry all produce. Dice the potatoes into 1/2-inch pieces. Cut the broccoli into bite-sized pieces if needed. Thinly slice the scallions, keeping whites and greens separate. Place the potatoes in a medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until tender, 10-12 minutes. Drain, rinse under cold water, transfer to a large bowl, and refrigerate until ready to use.

While the potatoes cook, toss the broccoli on a baking sheet with a large drizzle of oil and a pinch of salt and pepper. Roast on the top rack until browned and tender, 18-20 minutes.

Pat the chicken dry and season all over with half the Fry Seasoning (all for 4 servings), salt, and pepper. Heat a drizzle of oil in a large pan over medium-high. Add the chicken and cook until golden and cooked through, 3-5 minutes per side. USDA minimum: 165°F for chicken. Transfer to a plate. Wipe out the pan.

Add the scallion whites, mustard, and mayonnaise to the bowl with the cooled potatoes; stir until fully combined. Season with salt and pepper. Refrigerate until ready to serve.

Heat the pan used for the chicken over medium. Add the honey, 1 tablespoon butter (2 tablespoons for 4 servings), and a pinch of salt. Cook stirring until the butter melts, 30-60 seconds. Return the chicken to the pan and cook turning occasionally until fully coated and glazed, 1-2 minutes. Transfer to a cutting board.

Thinly slice the chicken crosswise. Divide the chicken, potato salad, and broccoli between plates. Spoon any remaining glaze over the chicken. Sprinkle the scallion greens over the potato salad and serve.
