How to make it
1
Rinse and dry all produce. Combine the rice, 2 1/4 cups water (4 1/2 cups for 8 servings), and a pinch of salt in a medium pot. Bring to a boil, cover, and reduce to a low simmer. Cook until the rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.
2
Melt 2 tablespoons butter in a small microwave-safe bowl, about 30 seconds. Stir in half the garlic powder. Roughly chop the cilantro.
3
Drain any excess liquid from the chicken. Heat a large drizzle of oil in a large high-sided pan over medium-high. Add the chicken in a single layer and season with salt and pepper. Cook stirring occasionally until browned and cooked through, 6-8 minutes. Reduce heat to medium. USDA minimum: 165°F for chicken.
4
Add the garam masala, curry powder, and remaining garlic powder to the pan. Cook stirring until fragrant, 30 seconds. Add the tomato paste, onion paste, and stock concentrates; stir to coat, 30 seconds. Add the cream sauce base and 3/4 cup water; stir to combine. Cook stirring occasionally until the sauce thickens, 2-3 minutes. Remove from heat. Add 3 tablespoons butter and 1/2 teaspoon sugar; stir until the butter melts. Cover to keep warm.
5
Position the oven rack at the top and heat the broiler to high. Place the pitas on a baking sheet. Spoon the garlic butter over the tops and scatter with mozzarella. Broil until the cheese melts and the pitas are toasted, 3-4 minutes. Watch closely to prevent burning.
6
Quarter the cheesy garlic flatbreads. Fluff the rice with a fork. Divide the rice between bowls and top with the butter chicken. Drizzle with yogurt and garnish with cilantro. Serve with the flatbreads on the side.
