Position a rack at the top and preheat the oven to 450°F. Using a heavy pan or rolling pin, crush the walnuts in their bag until finely ground. In a small bowl, combine the walnuts, panko, half the Fry Seasoning, a large drizzle of olive oil, salt, and pepper.

Pat the salmon dry and place in an oven-ready tray. Season all over with the remaining Fry Seasoning, salt, and pepper. Spread the top evenly with sour cream, then mound with the panko mixture and press to adhere. No need to coat the underside.

Roast on the top rack until browned and cooked through, 15-20 minutes. USDA minimum: 145°F for fish. (For 4 servings, roast two trays side by side on the top rack.)

While the salmon roasts, rinse and dry all produce. Remove and discard any large kale stems; chop the leaves into bite-sized pieces. Quarter, core, and thinly slice the pear. Place the kale in a large bowl, season with a pinch of salt, and massage with your hands until the leaves are tender, about 1 minute.

Add the pear, croutons, and as much dressing as you like to the bowl. Toss until evenly coated.

Slice the salmon crosswise. Divide the salmon and salad between plates and serve.
