One cup carries 560mg of sodium, about 24 percent of the daily limit, and a box is only 3 servings so a normal portion adds up fast. (source)
The honest take
This is shelf stable Italian gnocchi made in Italy with 85 percent potato puree, wheat flour, and salt, and the ingredient list is refreshingly short with no seed oils, no added sugar, and zero fat. Where it earns its keep is as a fast comfort food base that cooks in a couple of minutes, but nutritionally it is mostly starch, with 50g of carbohydrate and only 2g of fiber and 6g of protein per cup. The real thing to watch is sodium at 560mg per serving, and since a 16 oz box is only 3 servings it is easy to eat two and land near half a day of salt. It is a fine pantry staple if you treat it as the carb on your plate and build fiber and protein around it.
