This is a genuinely clean balsamic from Modena, Italy, with a short ingredient list of Trebbiano and Lambrusco cooked grape must plus wine vinegar, no caramel coloring, thickeners, or added sugar. Kosterina leans on high grape must content for a thick, syrupy pour, which is the opposite of the thin, caramel dosed bottles that fill most grocery shelves. Worth knowing that even with no added sugar, authentic balsamic is concentrated grape must, so the sweetness and carbs are naturally occurring rather than zero. At 20 dollars for a 375ml bottle it is a real premium over the 5 to 8 dollar grocery stuff, so it fits a shopper who cares about ingredient quality more than price.
