The catch

No added sugar is true, but it still carries about 60 calories per tablespoon, essentially all from naturally occurring grape sugar, so it is a sweeter and denser vinegar than a thin balsamic. (source)

The honest take

This is a genuinely authentic balsamic from Modena, made from cooked Trebbiano and Lambrusco grape must, wine vinegar, and black walnut concentrate, with no added sugar or caramel coloring like most supermarket bottles hide. The catch is that natural does not mean calorie free. At 60 calories per tablespoon it is roughly triple a thin everyday balsamic, and nearly all of those calories come from concentrated grape sugar. If you drizzle a teaspoon over salad or cheese it is a lovely, clean pantry upgrade, but it is still a sweet condiment to pour with a light hand.
