This is a jarred coconut curry base built on water, coconut cream, onion, and potato, and it stays genuinely light at 50 calories with just 2g of total sugars per quarter cup. The ingredient list is short and recognizable, it is vegan and dairy free, and the only thickener is a little rice or tapioca starch rather than a stack of gums. The main thing to watch is that the 1/4 cup serving is small, so a real dinner portion of two or three servings pushes sodium from 200mg up toward 400 to 600mg. It also leans on sunflower or safflower oil instead of more coconut, which is a minor knock if you are trying to steer clear of seed oils.
