The honest take

San J's organic tamari is about as clean as a soy sauce gets, just water, organic soybeans, salt, and a touch of organic alcohol to keep it fresh, with no wheat and no seed oils. Because it is brewed from 100 percent soybeans it carries 2 grams of protein and only 10 calories per tablespoon, and it skips the added sugar and caramel color you find in many cheaper bottles. The real catch is salt, since one tablespoon delivers 940 milligrams of sodium, roughly 41 percent of a day's limit. Used with a light hand it is a genuinely solid pantry staple, but it is not something to pour freely.
