Truffilicious Mushroom

This is a frozen cauliflower crust pizza, not a pantry staple, and the cauliflower halo is thinner than it sounds because the crust is built mostly on white and brown rice flour plus corn and tapioca starch, landing at 31g carbs with only 2g fiber per one third pizza. You do get a real 10g of protein and a reasonable 280 calories at that serving, but almost nobody eats a third of a pizza, and half or more pushes sodium, saturated fat, and calories up fast. The white truffle sauce leans on heavy cream, butter, and fully refined soybean oil, and the crust uses canola or sunflower oil, so anyone avoiding seed oils should look elsewhere. As an occasional gluten free treat it is fine, just not the clean health food the cauliflower name implies.
