The honest take

This is about as simple as pantry flour gets, one ingredient of 100 percent stone ground whole grain hard red wheat with nothing added. A quarter cup gives you 7g of fiber and 7g of protein for 140 calories, with 0g of sugar and 0mg of sodium, so it is a genuine whole grain swap for refined all purpose flour. The tradeoff is textural rather than nutritional, since whole wheat bakes denser and heavier, and this is still a raw ingredient you have to cook with, not a finished food. If you bake at home and want the bran and germ left in, it is an easy and honest choice.
