The catch

It is not a one to one wheat replacement, since it soaks up liquid aggressively and a 2 tablespoon serving already packs 5g of fiber, so recipes need reworking with more eggs and moisture. (source)

The honest take

This is about as clean as a pantry flour gets: the entire ingredient list is organic coconut, with nothing added. A 2 tablespoon serving delivers 5g of fiber for only 60 calories, which is why low carb, grain free, and paleo bakers reach for it. The 3g of sugar per serving is naturally occurring from the coconut, not added, and sodium is a trivial 10mg. The honest reason to hesitate is not the nutrition, it is the behavior in recipes, since coconut flour is extremely thirsty and will not swap one to one for wheat flour.
