2 each Grass-Fed Flank Steaks
12 oz Potatoes
8 oz Broccoli
1 each Lemon
1 oz Salted Butter
2 clove Garlic
¼ cup Sour Cream
1 oz Dried Medjool Dates
¼ tsp Crushed Red Pepper Flakes
How to make it

Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Pit and roughly chop the dates; place in a bowl with 2 tablespoons warm water (4 tbsp for 4 servings) to rehydrate. Cut the potatoes into a medium dice. Trim the broccoli stem and cut into small florets. Quarter and deseed the lemon(s). Peel 2 garlic cloves (4 for 4 servings); smash each once.

Add the potatoes to the boiling water. Cook 16-20 minutes until fork-tender. Drain and return to the pot. Add the sour cream; mash to your desired consistency. Taste and season. Cover to keep warm.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the broccoli; season. Cook stirring occasionally 3-4 minutes until lightly browned. Add the rehydrated dates (including liquid), the juice of 2 lemon wedges (4 wedges for 4 servings), and as much red pepper flake as you like; stir. Loosely cover with foil and cook undisturbed 2-3 minutes until the broccoli is tender and the liquid cooks off. Transfer to a bowl; cover with foil. Wipe out the pan.

Pat the steaks dry; season both sides with salt and pepper. Heat a drizzle of olive oil in the same pan over medium-high. Cook 4-6 minutes per side for medium-rare (125°F) or to your desired doneness. Transfer to a board and rest 5 minutes. USDA minimum: 145°F for steak. Slice crosswise against the grain. Leave the fond.

Add the smashed garlic and butter to the pan of fond. Cook over medium-high, stirring constantly and scraping up the fond, 1-2 minutes until the foam subsides and the butter smells nutty. Remove from heat; stir in the juice of the remaining lemon wedges. Taste and season. Discard the garlic. Serve the sliced steaks with the mashed potatoes and broccoli. Top the steaks with the pan sauce.
