Combine the rice and 3/4 cup water (1 1/2 cups for 4 servings) in a small pot. Bring to a boil, cover, and reduce to low. Cook until the rice is tender, 15-18 minutes. Keep covered off heat until ready.

While the rice cooks, rinse and dry all produce. Halve, peel, and thinly slice the onion. Halve, core, and thinly slice the bell pepper into strips. Trim and thinly slice the scallions, keeping whites and greens separate. Cut the tomatoes into 1/4-inch dice.

Heat a large drizzle of oil in a large pan over medium-high. Add the onion and bell pepper; cook stirring occasionally until just beginning to soften, about 2 minutes.

Drain any excess liquid from the chicken. Add the chicken, scallion whites, garlic powder, Fajita Spice Blend, half the tomatoes, salt, and pepper to the pan. Cook stirring occasionally until the chicken is cooked through and the vegetables are tender, 4-6 minutes. USDA minimum: 165°F for chicken. Stir in 1/4 cup water, the stock concentrate, and 1 tablespoon butter (1/2 cup water and 2 tablespoons butter for 4). Cook stirring constantly until the butter melts and the sauce thickens, 1-2 minutes.

In a small bowl, combine the scallion greens, remaining tomatoes, salt, and pepper. Fluff the rice and stir in the queso until fully combined. Taste and season.

Divide the queso rice and Tex-Mex chicken between bowls. Top with the fresh salsa and serve.
