How to make it

Position racks at the top and middle and preheat the oven to 425°F. Rinse and dry all produce. Cut the potatoes into 1/2-inch-thick wedges. Halve, core, and thinly slice the green pepper into strips. Halve, peel, and thinly slice half the onion (all of it for 4 servings). Microwave 2 tablespoons butter (4 tablespoons for 4) for 10-15 seconds until just softened; stir in 1/4 teaspoon garlic powder (1/2 teaspoon for 4) and a pinch of salt. Save the remaining garlic powder for the next step.

Toss the potatoes on a baking sheet with a drizzle of olive oil, remaining garlic powder, salt, and pepper. Roast on the top rack until browned and crispy, 20-25 minutes.

While the potatoes roast, heat a large drizzle of olive oil in a large pan over medium-high. Add the green pepper, sliced onion, and a pinch of salt and pepper. Cook stirring occasionally until softened and lightly charred, 5-7 minutes, adding splashes of water as needed to prevent burning. Transfer to a plate.

Pat the chicken dry and season all over with salt and pepper. Heat a drizzle of olive oil in the same pan over medium-high. Add the chicken and cook undisturbed until golden, 4-5 minutes. Flip and continue cooking until cooked through, 3-5 minutes more. USDA minimum: 165°F for chicken. Transfer to a cutting board and slice into strips.

Stir the tomato paste, half the Italian Seasoning, and 1/2 cup water (all the Italian Seasoning and 1 cup water for 4 servings) into the pan. Cook stirring until the sauce bubbles, 1-2 minutes. Return the sliced chicken to the pan and toss to coat. Taste and season with salt and pepper.

When the potatoes have about 5 minutes left, halve the baguettes lengthwise without cutting all the way through. Spread the cut sides with garlic butter; place cut-side up on a second baking sheet. Toast on the middle rack until golden, 3-4 minutes. Spoon the chicken mixture onto the bottom halves; top with the peppers and onions and mozzarella. Return to the middle rack until the cheese melts, 2-3 minutes.

Press the heroes closed. Divide between plates and serve with the potato wedges on the side.
